Z-Biltong Launching Camp Season with Crown Heights Pop Up Stand

This summer marks the third year in a row that ZBiltong is offering camp delivery, allowing parents to surprise their children at overnight camp with a healthy, protein-packed snack. Four years ago, Rabbi Zally Lazarus couldn’t have imagined that a beloved South African snack would become such a meaningful part of his shlichus in the United States. But today, ZBiltong, the company he and his wife Esti founded, is celebrating four years of producing kosher-certified biltong, and the impact has been far greater than they ever expected.

Launched in the early months of the COVID-19 pandemic, what began as a homegrown side project has grown into a thriving business that supplies kosher consumers across the country with something new and exciting: tender, flavorful, air-dried biltong made from high-quality beef, authentic South African spices, and with the highest standards of kashrus.

ZBiltong has grown beyond a food product—it’s become a vehicle for community connection and education. While Rabbi Lazarus continues to teach at the Torah Day School of Houston and he and Esti lead the Friendship Circle Youth Division, ZBiltong has taken on a life of its own, opening doors to new kinds of conversations.

Over the past year, the company has brought live biltong demos and tastings to Chabad Houses and Jewish communities nationwide, using the production process as a springboard for meaningful dialogue about kashrus, Jewish identity, and the value of tradition in modern life.

“It’s not just about meat—it’s about meaning,” Zally shared. “When people see how biltong—something new and intriguing—is crafted with care to meet kosher standards, it gets them thinking about how every part of life, even food, can reflect a deeper Jewish purpose.”

The combination of curiosity, delicious samples, and thought-provoking discussion makes these presentations particularly memorable. Rabbi Aron Pink of Chabad of East Plantation, Florida, who hosted a ZBiltong event, said: “The presentation was incredibly informative, easy to coordinate, and our community absolutely loved it. Biltong is such a relatable and intriguing topic, and Zally used it as a way to bring Yiddishkeit to life in a down-to-earth, engaging way.”

ZBiltong’s products are certified kosher by the Mehadrin Kashrus of Texas (MKT) and the Houston Kashrus Association (HKA), with all meat under the CHK. The product line now includes 11 different varieties, with traditional and spicy options, ranging from classic slices to innovative formats developed in-house.

As part of its ongoing growth, ZBiltong will host a pop-up in Crown Heights on Tuesday, June 17, from 5–7 PM outside Primo Hatters & Kapotas on Kingston Avenue. Locals and visitors are invited to sample, meet the makers, and stock up on this flavorful kosher favorite.

Rabbi Lazarus hopes ZBiltong continues to be more than just a snack. “We started this because we missed something we loved,” he said. “But now, it’s about giving others something they didn’t know they were missing. Whether it’s keeping kosher, supporting a small Jewish business, or just enjoying a really great product—it’s all part of a bigger picture.”
